Can you see the rainbow inside this bow? I sure can! I created this work of art on the fly, and combined a bunch of my favorite vegetables, grains, and protein together! Check out how I made this, on this post.

INGREDIENTS:

HOW YOU CAN MAKE THIS:

  1. Massage kale with olive oil, minced garlic, and 1 lemon juice in large bowl, massage for 1-2 minutes
  2. Chop a handful of cherry tomatoes in half, toss in a bowl with balsamic vinegar, salt & pepper
  3. Tempeh fajitas
  4. Blue rice
  5. Toss in some black beans, avocados, and some sautéed broccolini
  6. Top it off with some chipotle sauce
