INGREDIENTS:
- Kale
- Black beans
- Blue rice
- Cherry tomatoes
- Tempeh fajitas (view recipe here)
- Blue Rice (view recipe here)
- Purple yams
- Avocado
- Grilled broccolini
- Chipotle sauce (view recipe here)
HOW YOU CAN MAKE THIS:
- Massage kale with olive oil, minced garlic, and 1 lemon juice in large bowl, massage for 1-2 minutes
- Chop a handful of cherry tomatoes in half, toss in a bowl with balsamic vinegar, salt & pepper
- Tempeh fajitas
- Blue rice
- Toss in some black beans, avocados, and some sautéed broccolini
- Top it off with some chipotle sauce
