Felt inspired to make a tasty vegan meal that had some mushrooms and tofu in there… I sautéed them on a skillet, tossed in some spices (and some love), then added a bunch of colorful veggies such as beets, dark green leaves, carrots, and orange bell peppers. This meal will boost your energy levels and make you feel healthy!

INGREDIENTS:
- Spring mix
- Purple cabbage
- Raw beets
- Marinated edamame (super tasty)
- Sautéed mushrooms and tofu
- Cherry tomatoes
- Orange bell peppers
- Homemade dressing
- Sriracha ( Trader Joes brand)
HOW YOU CAN MAKE THIS YUMMY SALAD:
- Drizzle olive oil on a pan, and sauté those mushrooms & tofu.
- Use as many spices…
- Grab those raw veggies and start making that salad.
- Then toss those mushrooms and tofu in there.
- Drizzle some dressing.
- Devour!
