Felt inspired to make a tasty vegan meal that had some mushrooms and tofu in there… I sautéed them on a skillet, tossed in some spices (and some love), then added a bunch of colorful veggies such as beets, dark green leaves, carrots, and orange bell peppers. This meal will boost your energy levels and make you feel healthy!

INGREDIENTS:

  • Spring mix
  • Purple cabbage
  • Raw beets
  • Marinated edamame (super tasty)
  • Sautéed mushrooms and tofu
  • Cherry tomatoes
  • Orange bell peppers
  • Homemade dressing
  • Sriracha ( Trader Joes brand)

HOW YOU CAN MAKE THIS YUMMY SALAD:

  • Drizzle olive oil on a pan, and sauté those mushrooms & tofu.
  • Use as many spices…
  • Grab those raw veggies and start making that salad.
  • Then toss those mushrooms and tofu in there.
  • Drizzle some dressing.
  • Devour!
