Watermelon, watermelon, watermelon. I can’t get enough of this stuff! When picked right, each bite will be juicy and sweet… yum! Okay now back to this recipe.
I felt inspired to make my version of the feta watermelon salad by adding honey-roasted walnuts and a few other ingredients to make the flavors come to life.


WHY I LOVE WATERMELON
Where do I start?! Let’s just say I can eat this stuff year-round, any day of the week.. But let me tell ya from start to finish. It all begins with the journey to the local grocery store in the product section. The first mission is to pick the right watermelon! I look for the big yellow spot on the corners of the watermelon, once that’s checked off, I make sure it sounds hollow when listening to like a mad man… haha. I take my watermelon choosing skills very seriously.
Ok lastly, when you take that first bite of freshly cut watermelon that has been sitting in the fridge overnight… just hits differently! The crunchy bite filled with that sweet juice just makes you go crazy! This stuff is healthy, great for hydration, gets you full, and even aids in increasing libido! That’s a win, win, win, and another win!

INGREDIENTS
- Arugula
- Cucumber
- Watermelon balls
- Sweet onion
- Cherry tomatoes
- Olives
- Roasted walnuts with honey
- Lemon
- Feta cheese
- Balsamic glaze
- Sesame seeds
- Salt & pepper

HOW YOU CAN MAKE THIS!
- Toss some arugula in a bowl
- Slice up some cucumber! I made it arts by making them look like pasta.
- Make those watermelon balls. Then toss in bowl
- Add some sliced olives, sweet onion, and cherry tomatoes
- Air-fry 1/2 cup walnuts covered in honey for 5-10 min at 300F.
- Let the air-fried walnuts cool, then toss in the bowl
- Add some lemon/lime juice!
- Sprinkle some feta on there, or a lot… your choice
- Now for that balsamic glaze!
- Add some salt/pepper to taste
- Garnish with black sesame seeds
- Enjoy!
