This super simple shrimp salad will take you to your happy place with every bite! The combination of flavors from the air-fried sweet potatoes, sautéed mushrooms, strawberries, and the tahini chipotle dressing – truly makes this meal one of a kind! My Favorite Meal: A Rainbow Salad/Buddha Bowl

A nutrition-packed salad bowl with vegetables that touch every color on the rainbow, a healthy legume or grain, protein (tempeh, chicken, tofu, etc.), some healthy fats (olive oil, nuts, etc.), and the best part – a super savory and delicious dressing!

INGREDIENTS:

  • 1/2 Cup frozen shrimp
  • 1/2 cup Mushrooms
  • 1 Sweet potato
  • 1/2 cup Spring mix
  • 1/2 cupPurple cabbage
  • 1/2 can Garbanzo beans
  • Handful Strawberries
  • 1/2 Bell pepper
  • 1/2 Peach
  • 1 mini bell pepper

SALAD DRESSING INGREDIENTS:

  • 2 tbsp balsamic vinegar
  • 2 tbsp tahini
  • 1 tsp adobo chili sauce
  • Salt & pepper
  • 2 cloves garlic
  • Splash of water

SPICES USED:

Olive oil
Garlic powder
Salt & pepper
Smoked paprika

  1. Sauté shrimp with olive oil and add spices. 3 minutes each side.
  2. Toss in diced mushrooms while cooking the shrimp. Add some water and more spices.
  3. Toss chopped potatoes in the air-fryer. 380F for 25min.
  4. Make the dressing (AKA, magic sauce) in a mason jar; no need for a blender!
  5. Prepare the salad with all the ingredients.
  6. Add the sautéed shrimp and air-fried potatoes.
  7. Drizzle that dressing!
  8. Devour!
