This super simple shrimp salad will take you to your happy place with every bite! The combination of flavors from the air-fried sweet potatoes, sautéed mushrooms, strawberries, and the tahini chipotle dressing – truly makes this meal one of a kind! My Favorite Meal: A Rainbow Salad/Buddha Bowl
A nutrition-packed salad bowl with vegetables that touch every color on the rainbow, a healthy legume or grain, protein (tempeh, chicken, tofu, etc.), some healthy fats (olive oil, nuts, etc.), and the best part – a super savory and delicious dressing!

INGREDIENTS:
- 1/2 Cup frozen shrimp
- 1/2 cup Mushrooms
- 1 Sweet potato
- 1/2 cup Spring mix
- 1/2 cupPurple cabbage
- 1/2 can Garbanzo beans
- Handful Strawberries
- 1/2 Bell pepper
- 1/2 Peach
- 1 mini bell pepper

SALAD DRESSING INGREDIENTS:
- 2 tbsp balsamic vinegar
- 2 tbsp tahini
- 1 tsp adobo chili sauce
- Salt & pepper
- 2 cloves garlic
- Splash of water
SPICES USED:
Olive oil
Garlic powder
Salt & pepper
Smoked paprika

- Sauté shrimp with olive oil and add spices. 3 minutes each side.
- Toss in diced mushrooms while cooking the shrimp. Add some water and more spices.
- Toss chopped potatoes in the air-fryer. 380F for 25min.
- Make the dressing (AKA, magic sauce) in a mason jar; no need for a blender!
- Prepare the salad with all the ingredients.
- Add the sautéed shrimp and air-fried potatoes.
- Drizzle that dressing!
- Devour!
