Hi there! This is my first episode of my Super Simple Salads Series, where I’ll be showing you how to create beautiful salads that are packed with flavor, vibrant in color, and made with whole food ingredients. Here’s episode one:

This rainbow salad with crispy air-fried tofu smothered in my homemade buffalo sauce is the most flavorful salad I’ve made to date… Using arrow-root did the trick, it added the crispy texture, like that of a chicken wing.. but healthier! You definitely want to give this one a try.

INGREDIENTS

There’s three parts to the ingredients: air-fried tofu, buffalo sauce, and the salad. Let’s break it down!

Air-Fried Tofu:

  • 1/2 block extra firm organic tofu
  • 1 1/2 arrowroot powder
  • 1 tsp smoked paprika
  • 2 cloves diced garlic (or garlic powder)
  • 1 tbsp olive oil
  • Spices:
    • Pinch sea salt
    • Pepper
    • 21 seasoning
    • Nutritional yeast

Buffalo Sauce:

  • 2 tbsp balsamic vinegar
  • 2 tbsp tahini
  • 1 tbsp apple cider vinegar
  • 1/2 tbsp honey
  • 1 tbsp smoked paprika
  • 1/2 tsp cayenne pepper

The Salad:

  • Purple cabbage
  • Carrot
  • Cucumber
  • Red bell pepper
  • Spring mix
  • Mushrooms

HOW YOU CAN MAKE THIS BUFFALO TOFU RAINBOW SALAD

  1. Pre-heat the air-fryer to 400F for 5 min
  2. Cut up the tofu in 1/2 pieces then set them aside
  3. In a bowl, mix the ingredients for the air-fry tofu together, and toss the tofu in the bowl, then mix it up.
  4. Once done mixing, toss the spiced up tofu in the air fryer for 10-13 minutes at 400F
  5. While the tofus fryin’…. it’s a perfect time to make that buffalo sauce (literally the best sauce).
  6. In a bowl, add all of the ingredients for the buffalo sauce and mix it. Set it aside until tofu is ready.
  7. You’ll know the tofu is ready when the outside is crispy.
  8. Once tofu is ready, add it to a bowl, then add that buffalo sauce!
  9. Now add the salad ingredients into a bowl as well, toss those buffalo tofu bites in there then it’s time to devour!
  10. You can also add any garnish you like, I added green onions and balsamic glaze.

Instructions

  • Buffalo sauce: In a bowl, add all of the ingredients, then mix. Set it aside until tofu is ready.
  • You’ll know the tofu is ready when the outside is crispy.
  • Once tofu is ready, add it to a bowl then add the buffalo sauce
  • Add veggies to a bowl, then toss in those crispy air-fried tofu smothered in buffalo sauce
  • For garnish, I added green onions and balsamic glaze
